I would like to learn how to create a Docker Swarm of Appwrite containers and manage it with the Swarmpit open source UI, but this concept seems to be so complicated that I'm too intimidated by it for me to attempt to undertake it on my own without any guidance from the Appwrite team. Would you guys be able to post a tutorial how to do this? Thanks.

I'm personally also not comfortable tackling this issue. What you might get, @Mattias Aabmets, is an engineering blog on how we scale Appwrite cloud once we figure it out ourselves π
If Appwrite were built from the beginning with Kubernetes in mind, then scaling becomes trivial. You'll eventually get there through growing pains once you realize how docker swarm is severely deficient in many ways.
