Found the issue, when logging appwrite container log (using docker logs appwrite)
Saw that error: OpenRuntimes\Orchestrator\Exception\ApiException: docker.createSidecarContainer: "specify health-check start interval" requires API version 1.44, but the Docker daemon API version is 1.43
I upgraded to Docker 28.5.2 (API 1.51) and I can now build again without issue.
So for users with the same issue, do not forget to update your Docker version when upgrading to 2.x.x 🙂
Thanks @Ibaraki Douji
