Expo vs APK OAuth issue

I have an app that works using Expo for google OAuth but after compiling into an apk file I don't even get google account selection?

TL;DR
Developers are experiencing an issue with OAuth when using Expo vs APK for their app. After compiling into an APK file, the Google account selection is not working.
