Is there the possibility or any plan to allow the configuration of SMTP server and login to send the emails with the app/platform/website/whatever domain instead of sending them from team@appwrite.io ?

It's planned to be introduced in the next release of Appwrite. Some time after the release, Cloud will be updated and receive the corresponding feature
